The smell of of roasting coffee hit me like a waft of spice….. it was half-way between mouth-watering and eye-watering, a smell as dark as burning pitch; a bitter, black, beguiling perfume that caught at the back of the throat, filling the nostrils and the brain. A man could be addicted to that smell, as quick as any opium. – Anthony Capella, The Various Flavors of Coffee (2008)
It was my first time to attend one of the few seminars hosted by Yardstick about coffee. The topic was a journey of a colleague Zee Zamora in working with Filipino coffee farmers and how she sparks and continue to educate people regarding coffee farming.
Zee Zamora Perez shares some suggestions on how to improve quality at the origin level. One suggestion is to set standards especially during harvest season. The farmers need to understand how proper or improper picking results to a better or an inferior cup. Zee collaborates with farmers intent on producing high quality Philippine grown coffee for the specialty market.
